I got home from Yoga tonight and realized we had absolutely no food in our house. I looked at the clock expecting it to read a lot later than it was knowing that I had plenty of time to run to the store. I thought about it reallyyy hard and decided that it just seemed too far away and a shower was probably more important. I sat myself down on the couch trying to brainstorm an idea of how to make a healthy dinner without having to go to the grocery store this evening. I went with whole wheat blueberry pancakes and I'm pretty sure I gained about 100 brownie points with my husband because of them. I'm typically a firm believer in having a protein, a carbohydrate, and a healthy fat for dinner. Tonight my idea of a well balanced meal slipped to the back of my mind and what do you know, my life is complete.
I did throw a couple of clementines on the table trying to add some sort of color to the room. You win some you lose some I guess.
I have to share this recipe, however, because if you're anything like me and believe that blueberries should be a major food group, you will love them.
1 cup whole wheat flour2 large eggs1 teaspoon baking powder1 teaspoon vanilla1 cup milk (I used unsweetened almond milk)1 banana, mashed1/2 CUP fresh blueberriespinch of cinnamonMaple Syrup & Almond Butter (Optional)
Heat a pan and spray with non-stick cooking oil. Combine all of the above ingredients into a bowl and spoon the batter onto the heated pan. Cook until the batter begins to bubble. Flip to the other side and cook for 20 seconds (or until cooked all the way through). Top with your favorite toppings, almond butter, or maple syrup. Or if you're like me, all of the above.
